Uno spettro di sapori unici che si incontrano ed esaltano insieme. È questo il segreto del sidro “Terre Cartusiae”, realizzato con oltre 200 varietà di mele, per la maggior parte antiche. Il sidro 2023 dell’azienda agricola di Caerano San Marco (Treviso) è un inno alla biodiversità, che si riflette nel sapore distintivo delle due varianti: medio e vivace. Il sidro medio è tra i due il più fine, e il basso tenore alcolico lo rende adatto alla degustazione in qualsiasi momento della giornata, magari accompagnato da assaggi dolci o salati. Mentre il sidro vivace, come il nome stesso suggerisce, è una bevanda più vibrante e accesa, la cui piacevole alcolicità e il tenore zuccherino leggermente più basso lo rendono adatto ad essere degustato sia da solo che a pasto. L’azienda agricola Terre Cartusiae è tra le poche realtà venete attive nel settore della produzione del sidro di mela. La società ha scelto di adottare il metodo biologico per tutta la sua tenuta, all’interno della quale sono coltivate circa duecento varietà di mele recuperate attraverso il contatto con diversi vivaisti italiani. È seguito un prezioso lavoro di ricerca in collaborazione con l’Istituto Agrario “Alberto Parolini” di Bassano del Grappa, per analizzare resistenze a malattie fungine e per individuare le caratteristiche intrinseche delle mele prodotte (acidità, zuccheri, polifenoli).



La tenuta di Terre Cartusiae si estende per 3 ettari e comprende circa 4mila piante tra i Colli di Asolo e il Montello, un’area che tra la metà del 1500 e la fine del 1700 apparteneva alla Certosa del Montello di Nervesa della Battaglia. Un complesso architettonico di grande bellezza andato perduto a seguito dell’abbattimento nel diciannovesimo secolo. Da qui il nome: Terre Cartusiae. In questi luoghi, tra Ottocento e Novecento, era particolarmente diffusa la coltivazione delle mele, in parte vendute dalle famiglie di mezzadri, affittuari e piccoli proprietari terrieri per incrementare le scarse entrate, in parte conservate per il consumo nei mesi invernali. Oggi Terre Cartusiae intende accostarsi a questa antica tradizione di lavoro, innovazione, passione per la biodiversità, amore per la natura, rispetto per le sue regole e i suoi lenti cicli vitali.

In soli due anni, questa avventura ha preso forma e la nostra scelta di porre l’accento sulla biodiversità, impiegando ben 200 varietà di mele antiche, ha dimostrato di essere vincente anche in termini di gusto. Questa è la strada che vogliamo continuare a percorrere, e non solo perché garantisce l’eccellenza del prodotto ma anche per il nostro impegno nella tutela della biodiversità. Mi piacerebbe che Terre Cartusiae diventasse un vero e proprio laboratorio – aggiunge Ceccato –, un luogo in cui sperimentare soluzioni innovative in questo senso e da condividere anche con altri produttori di mele. È una missione che abbracciamo con passione, desiderosi di dimostrare come sapore e rispetto per l’ambiente possano andare di pari passo”.
200 ancient varieties of apples in the cider of the 2023 season of “Terre Cartusiae
A spectrum of unique flavors that meet and exalt together. This is the secret of “Terre Cartusiae” cider, made with over 200 varieties of apples, most of them ancient. The 2023 cider from the Caerano San Marco farm (Treviso) is a hymn to biodiversity, which is reflected in the distinctive flavor of the two variants: medium and lively. Medium cider is the finest of the two, and the low alcohol content makes it suitable for tasting at any time of the day, perhaps accompanied by sweet or savory tastings. While lively cider, as the name itself suggests, is a more vibrant and bright drink, whose pleasant alcohol content and slightly lower sugar content make it suitable to be enjoyed both on its own and with a meal. The Terre Cartusiae agricultural company is among the few Venetian companies active in the apple cider production sector. The company has chosen to adopt the organic method for its entire estate, within which approximately two hundred varieties of apples are grown, recovered through contact with various Italian nurserymen. Valuable research work followed in collaboration with the “Alberto Parolini” Agricultural Institute of Bassano del Grappa, to analyze resistance to fungal diseases and to identify the intrinsic characteristics of the apples produced (acidity, sugars, polyphenols).
The Terre Cartusiae estate extends for 3 hectares and includes around 4 thousand plants between the Asolo Hills and Montello, an area that between the mid-1500s and the end of the 1700s belonged to the Certosa del Montello di Nervesa della Battaglia. An architectural complex of great beauty that was lost following demolition in the nineteenth century. Hence the name: Terre Cartusiae. In these places, between the 19th and 20th centuries, the cultivation of apples was particularly widespread, partly sold by families of sharecroppers, tenants and small landowners to increase their limited income, partly preserved for consumption in the winter months. Today Terre Cartusiae intends to approach this ancient tradition of work, innovation, passion for biodiversity, love for nature, respect for its rules and its slow life cycles.
