L’Ittiturismo Al Fritulìn si trova in località Bonelli a Scardovari (RO).
Gianluca Corradin insieme alla moglie Sonia Finotti ha voluto fortemente l’Ittiturismo Al Fritulin che si trova in località Bonelli a Scardovari (Ro) non fosse altro che dal progetto iniziale all’apertura del locale ci sono voluti nove anni. “Abbiamo inaugurato nel 2016 – ricorda Gianluca Corradin – ma ci sono voluti nove anni di gestazione. Il primo progetto regionale, infatti, mi venne proposto nel 2007 con tutti i requisiti di finanziabilità da parte della Comunità Europea per avviare un’attività di ittiturismo, pescaturismo, escursionismo, birdwatching”. Gianluca Corradin gioca in casa essendo nativo di Bonelli “anzi – sottolinea – l’unico nato in frazione dopo l’ultima alluvione del 1966. Ora come ora parliamo di una zona turistica importante, molto frequentata grazie anche agli investimenti che hanno portato strutture e servizi come Villaggio Barricata”. Discendente da una famiglia di pescatori, Gianluca continua a definirsi un vecchio perito elettromeccanico. “Probabilmente mio padre e tutto sommato neanche io, non vedeva futuro nella pesca e per questo insistette a suo tempo perché continuassi negli studi.


Mi sono diplomato nel 1986 e fino al 1989 sono stato in giro per l’Italia per fare esperienza nel settore anche perché il mio obiettivo era entrare a lavorare presso la Centrale Enel di Porto Tolle (Ro). Purtroppo, o per fortuna, non ci sono riuscito e quindi sono tornato a casa dove ho ripreso l’attività di pesca tradizionale compreso l’allevamento di cozze e vongole. Nel 2006 per passatempo ho fatto un corso per operatore di pescaturismo, attività collaterale alla pesca che, come altre, iniziavano a decollare con l’obiettivo di fornire ai pescatori fonti alternative di guadagno. I docenti di questi corsi erano prevalentemente guide naturalistiche. E da lì è partito tutto considerato che abbiamo iniziato a collaborare da subito e la mia curiosità è cresciuta al punto da frequentare ulteriori corsi di formazione per approfondire la storia di questo territorio e trasmetterla agli ospiti da trasportare con la mia barca nel Delta. Nel 2006 queste zone erano ancora poco conosciute e scarsamente frequentate da turisti. Ricordo la mia prima escursione…peggio non poteva andare. Mi era appena arrivata la barca nuova che decisi di acquistare per praticare il pescaturismo ma ancora non era attrezzata per ospitare turisti. Un amico ristoratore mi propose di guidare in escursione un paio di clienti livornesi del suo locale. Non potevo certo rifiutare! Saliti nella barca vecchia che usavo quotidianamente per andare a pesca a un certo punto il motore mi abbandona e così li ho riportati a terra a remi. Non potevo lasciarli con la curiosità di conoscere il nostro territorio e io non volevo fare brutta figura e così mi proposi di accompagnarli in un albergo per rifare l’escursione il giorno seguente. Beh, dopo la loro prima esperienza tra i canneti di Bonelli, sono venuti a trovarmi con gli amici per quattro anni consecutivi. Ho capito in quel momento la potenzialità e la vocazione turistica di questo territorio; dallo sguardo dei turisti rapiti dai paesaggi e dalla natura, alla ricerca di emozioni ed esperienze nuove e diverse. La partita dell’ittiturismo è nata in quel momento tanto più considerato che all’epoca c’erano finanziamenti pubblici interessanti”. L’immobile, poi adibito ad ittiturismo, non esisteva e inizialmente doveva essere di proprietà della cooperativa alla quale aderiva Gianluca. La prima storica cooperativa di Scardovari con oltre 400 soci tra i quali, ancora adesso, Gianluca. “Quando siamo partiti da soli nel 2016 rilevando il progetto, ci eravamo già fatti carico di tutti i costi con i prezzi delle materie prime e di manodopera che erano lievitati enormemente. Non solo, i finanziamenti pubblici erano finiti. Per fortuna mia moglie è stata particolarmente determinata e siamo giunti a conclusione aprendo il locale appena possibile.


Da allora la nostra proposta gastronomica ha subito poche modifiche”. In cucina comandano La moglie Sonia aiutata talvolta dal figlio Mattia che nonostante sia impiegato altrove trova il tempo di supportare la famiglia. La proposta è fondamentalmente legata al pescato locale e alla stagionalità. “Il nostro menù – sostiene Gianluca – cambia in base alla disponibilità del pescato ed è una cucina tipicamente espressa. Ho voluto diversificare da subito la proposta gastronomica perché in zona i ristoranti non mancano e desideravamo far assaggiare piatti diversi dalla solita grigliata di pesce o spaghetti alle vongole. Non è stato facile aprire un locale con un menù differente e condurre le persone ad apprezzarlo. Ad esempio non facciamo il risotto perché ci vogliono 40 minuti e blocca due fuochi in una cucina funzionale ma essenziale. Un piatto tipico e ricercato come le sarde in saor non fa sempre parte del nostro menù ed è sostanzialmente proposto da tutti i ristoratori della zona. Quello che più di altro ci ha permesso di farci notare è la vera frittura di paranza, tra i primi a prepararla in zona. Per quanto riguarda l’anguilla, solo pescata, la prepariamo alla griglia e le più piccole, aperte e fritte”. E poi, immancabile la proposta di “Cozza di Scardovari dop” in stagione e di “Ostrica Rosa”. Prossimamente integreremo il nostro menù con altre ostriche allevate nella Sacca degli Scardovari come ” l’ostrabora” o ” l’ostrica di Scardovari. Complessivamente, comunque, Il pesce usato per i nostri piatti viene in parte pescato da me stesso in laguna oppure ci riforniamo al mercato ittico di Scardovari o di Pila. I dolci sono rigorosamente fatti in casa da mia moglie Sonia e al momento non proponiamo piatti da asporto”. Gianluca è sommelier Fisar dal 2020 e questo lo ha aiutato a cercare di proporre una lista originale per quanto possibile sui vini. Dai vini territoriali come i cosiddetti “Vini delle sabbie”, a vini nazionali e internazionali. Ci sono anche vini sfusi e per gli appassionati una birra artigianale a base di riso locale della Società Agricola Moretto di Cassella di Porto Tolle. “Per quanto riguarda lavori a venire – evidenzia Gianluca – ho fatto domanda di ampliamento per affiancare una piccola depandance con una scaletta per attracco barche. E questo nonostante le difficoltà derivate dalla presenza del granchio blu che ha messo in ginocchio il settore della pesca con le cooperative che hanno perso decine e decine di soci”.
Al Fritulin, a Terrace on the Po River
The Ittiturismo Al Fritulìn is located in Bonelli, Scardovari (RO).
Gianluca Corradin, together with his wife Sonia Finotti, strongly desired the Ittiturismo (fishing tourism restaurant) Al Fritulin, located in Bonelli, Scardovari (RO), not least because the project took nine years from initial concept to the opening of the venue. “We opened in 2016,” recalls Gianluca Corradin, “but it took nine years of gestation. The first regional project, in fact, was proposed to me in 2007 with all the funding requirements from the European Community to start a business in fishing tourism, excursionism, and birdwatching.”
Gianluca Corradin is a local, being a native of Bonelli—“in fact,” he stresses, “the only person born in the hamlet after the last flood in 1966. Now, we’re talking about an important tourist area, very popular, thanks also to investments that have brought facilities and services like Villaggio Barricata.” Descended from a family of fishermen, Gianluca still defines himself as an old electromechanical expert. “My father, and all in all, not even I, saw a future in fishing, which is why he insisted at the time that I continue my studies.”

“I graduated in 1986 and until 1989, I traveled around Italy to gain experience in the sector, also because my goal was to work at the Enel Power Plant in Porto Tolle (RO). Unfortunately, or fortunately, I didn’t succeed, so I returned home where I resumed traditional fishing activities, including the farming of mussels and clams. In 2006, as a pastime, I took a course to become a fishing tourism operator, a collateral activity to fishing that, like others, was starting to take off with the aim of providing fishermen with alternative sources of income. The instructors of these courses were predominantly nature guides. And that’s where it all started, considering we began collaborating immediately, and my curiosity grew to the point where I attended further training courses to deepen my knowledge of this territory’s history and transmit it to guests I transported on my boat in the Delta.”
“In 2006, these areas were still little known and sparsely frequented by tourists. I remember my first excursion… it couldn’t have gone worse. My new boat had just arrived, which I decided to buy for fishing tourism, but it wasn’t yet equipped to host tourists. A restaurateur friend suggested I guide a couple of his Livorno clients on an excursion. I certainly couldn’t refuse! We got on the old boat I used daily for fishing, and at a certain point, the engine quit on me, so I brought them back to shore with oars. I couldn’t leave them without knowing our territory, and I didn’t want to make a bad impression, so I offered to take them to a hotel to repeat the excursion the next day. Well, after their first experience among the reeds of Bonelli, they came to visit me with friends for four consecutive years. I understood at that moment the potential and tourist vocation of this territory; from the look of the tourists captivated by the landscapes and nature, seeking new and different emotions and experiences. The ittiturismo venture was born at that moment, especially considering that there was interesting public funding at the time.”
The building, later used as the ittiturismo, did not exist and was initially intended to be owned by the cooperative to which Gianluca belonged. The first historic cooperative in Scardovari had over 400 members, including Gianluca, who is still a member now. “When we started on our own in 2016, taking over the project, we had already taken on all the costs, with raw material and labor prices that had increased enormously. Not only that, but public funding had run out. Fortunately, my wife was particularly determined, and we reached the conclusion, opening the venue as soon as possible. Since then, our gastronomic proposal has undergone few changes.”
In the kitchen, Sonia, often helped by their son Mattia (who, despite being employed elsewhere, finds time to support the family), is in charge. The offering is fundamentally linked to local catch and seasonality. “Our menu,” says Gianluca, “changes based on the availability of the catch and is typically express cuisine (cooked to order). I wanted to diversify the gastronomic proposal immediately because there is no shortage of restaurants in the area, and we wanted to offer dishes different from the usual grilled fish or spaghetti with clams. It was not easy to open a place with a different menu and lead people to appreciate it. For example, we don’t make risotto because it takes 40 minutes and ties up two burners in a functional but essential kitchen. A typical and sought-after dish like sarde in saor (sweet and sour sardines) is not always part of our menu and is essentially offered by all restaurateurs in the area. What has allowed us to stand out most is the true frittura di paranza (mixed small fried fish), as we were among the first to prepare it in the area. As for eel, which is only wild-caught, we prepare it grilled, and the smaller ones are opened and fried.”
And then, the unmissable offering of “Cozza di Scardovari DOP” (DOP Scardovari Mussel) in season and “Ostrica Rosa” (Pink Oyster). Soon, we will integrate our menu with other oysters farmed in the Sacca degli Scardovari, such as “l’ostrabora” or the “Scardovari oyster.” Overall, however, the fish used for our dishes is partly caught by myself in the lagoon, or we source it from the fish market in Scardovari or Pila. The desserts are strictly homemade by my wife Sonia, and we do not currently offer takeout dishes.”
Gianluca has been a Fisar sommelier since 2020, and this has helped him try to offer an original wine list where possible. From local wines like the so-called “Vini delle sabbie” (Wines of the Sands), to national and international wines. There are also bulk wines and, for enthusiasts, a craft beer made from local rice from the Società Agricola Moretto di Cassella in Porto Tolle.
“As for future works,” Gianluca emphasizes, “I have applied for an expansion to add a small annex with a ladder for boat docking. This is despite the difficulties arising from the presence of the blue crab, which has brought the fishing sector to its knees, with cooperatives having lost dozens and dozens of members.”
