Nel piccolo mondo antico dei Gianolli, una splendida collina a Grezzane (Vr), tra i 450 e i 700 metri di quota, troviamo in cinquantacinque ettari, trentatre di superficie vitata, orti, allevamenti e soprattutto il Resort & Restaurant “Cà del Moro” per l’hospitality e la ristorazione. Un mix di ruralità e modernità da cui nascono undici etichette di vino suddivise in tre selezioni e un menù fine dining dove svettano le reinterpretazioni dei piatti della tradizione lessina sapientemente rivisitati con gli influssi mediterranei dagli chef Giuseppe Lamanna e Lina Maffia.






La Collina dei Ciliegi – Le Origini. È il 1925, quando Armando Gianolli, papà di Massimo, nasce a Verona. Con gli anni la mamma milanese lo affida ad una balia in località Camponi, adiacente ad Erbin, Comune di Grazzane (Vr)dove oggi ha sede l’azienda. E qui Armando trascorre la sua prima infanzia fino a quando, nel 1932, fa ritorno a Milano. Né gli studi né la carriera nel mondo assicurativo affievoliscono il legame con questa terra, al punto che negli anni 60-70, in pieno spopolamento di questa zona collinare a forte vocazione agricola, Armando inizia ad acquisire i terreni in località Erbin, il borgo che lo aveva visto crescere e ritornare ad ogni occasione. E qui nasce la prima azienda agricola della famiglia Gianolli, poi trasformata da Massimo in un’impresa vitivinicola (2010) e ricettivo-alberghiera (2018). Cinquantotto ettaridi cui trentatré a vigneto in conversione biologica, 11 etichette suddivise in tre collezioni(Terrena, Radicata, Supervalpantena). A settembre 2022, Meregalli Giuseppe Spa- holding del Gruppo Meregalli, leader della distribuzione di vini e spirits di alta gamma con un catalogo composto da più di 200 produttori e con 2.000 specialità in esclusiva – è entrato nel capitale di Advini Italia Spa, la joint venture costuita nel luglio 2020 da La Collina dei Ciliegi e dal gruppo francese Advini SA. È nata così AMC Vini Spa(Advini – Meregalli – Collina) che vede la partecipazione dei tre soci con quote paritarie. Nell’accordo societario anche l’affidamento della distribuzione in esclusiva dei vini de La Collina dei Ciliegi a Visconti43, società del gruppo Meregalli con un catalogo composto da oltre 40 cantine dal Friuli alla Borgogna, dalla Toscana allo Champagne, per il canale ho.re.ca. dell’intero territorio italiano. I vini de La Collina dei Ciliegi spaziano su collezioni diverse. La collezione Radicata che contempla un’Amarone della Valpolicella, Valpolicella Ripasso (Maciòn) e Valpolicella Superiore (Formiga), Recioto della Valpolicella, Camponi (Corvina), Cà del Moro (Garganega), Spumante Brut (Garganega e Chardonnay); la collezione Terrena con l’Amarone (Ciliegio), l’Amarone della Valpolicella Riserva (Ciliegio Armando Gianolli) Il Valpolicella Superiore (Peratara).





Cà del Moro Wine Retreat. Immerso tra i vigneti della proprietà in Valpantena nel veronese tra i 450 e 700 metri di quota, troviamo il Resort & Restaurant “Ca’ del Moro Wine Retreat”, hospitality de La Collina dei Ciliegi. Inaugurato nel 2018, dopo un’opera di recupero di antiche stalle del borgo di origine cimbra di Erbin, Cà del Moro coniuga ruralità e modernità grazie ad un’opera di ristrutturazione effettuata secondo gli antichi metodi delle malghe della Lessinia con tecniche di recupero che prevedono la miscelazione di pietre, calci vive e fibre naturali. Una cura per il dettaglio che ritroviamo nella proposta fine dining con una proposta di menu che racconta lo stretto legame con la Lessinia e le sue tradizioni più antiche. Settanta coperti suddivisi in tre sale interne, terrazza panoramica e plateaico. Menu firmati dagli chef Giuseppe Lamanna e Lina Maffia che valorizzano le migliori produzioni locali e nazionali con reinterpretazioni dei piatti della tradizione sapientemente rivisitati con gli influssi mediterranei e con le origini calabre e pugliesi degli chef. Tra le diverse attività proposte dalla struttura troviamo le escursioni e le passeggiate a cavallo, i tour guidati in e-bike tra i vigneti, per terminare con i percorsi di degustazione in cantina o nell’Enoteca del Resort. E poi le camere: Amarone, Valpolicella, Recioto, Ripasso, Garganega e Corvina non sono solo i 4 grandi rossi veronesi e vitigni del terroir di collina che circonda Verona. Sono anche i nomi delle 6 camere di Ca’ del Moro Wine Retreat.












La proposta di Giuseppe e Lina. Arrivati da Courmayeur dopo la pandemia, gli chef Giuseppe Lamanna e Lina Maffia, compagni da dodici anni nella vita, si sono calati in una realtà molto giovane, una famiglia come amano sottolineare, non un’azienda in senso stretto. “Siamo partiti che eravamo io e Lina – sottolinea Giuseppe – e adesso abbiamo uno staff di sei persone solo in cucina. Prestiamo servizio per le sei camere, per l’enoteca con degustazione e soprattutto per il ristorante con trentacinque coperti. Il servizio è a tutto tondo, dalla colazione al pranzo fino alla cena. Tutto preparato da noi a partire dalla pasticceria”. Giuseppe e Lina hanno ereditato una cucina molto del territorio e tradizionale. Appena entrati in attività hanno iniziato da subito a cercare prodotti e produttori della zona compatibili con i loro principi: no alle carni provenienti da allevamenti intensivi, attenzione al benessere animale, meglio se biologico. Per la carne bovina si servono da Damini & Affini dai quali acquistano sorane e le uova vengono acquistate da Contrada Cà Vittoria. “Sono tutte aziende che andiamo regolarmente a visitare – puntualizzano – e con le quali ci confrontiamo per avere sempre le conferme che cerchiamo”. Verdure e frutta? In azienda su un totale di cinquantotto ettari di superficie aziendale, di cui trentatré vitati, hanno due orti oltre che un maneggio con quindici cavalli e un allevamento di pecora brogna. “Nei nostri piatti, venendo dal sud, svetta la nota mediterranea anche utilizzando materie prime del territorio se non provenienti direttamente dal nostro orto. Offriamo una proposta à la carte con 5 antipasti, 5 primi, 5 secondi e 3 dessert e poi un menu degustazione da cinque o da nove portate. Da un po’ stiamo lavorando su un terzo menu che sia più incentrato sulle nostre origini calabresi e pugliesi. Ci piace fare ricerca e avere e mostrare cura nel piatto con abbinamenti ricercati ma senza mai osare troppo”. Due piatti che vi danno particolare soddisfazione? “Lo spaghettone alla nduja – afferma Giuseppe – che è un piatto mio che non volevo inserire ma mi è stato particolarmente richiesto e sta avendo molto successo. E poi il risotto all’amarone che interpretiamo con fave di cacao, polpa di ciliegie e bergamotto. Un altro piatto particolare guardando ai secondi è il manzo al carbone. La griglia non c’entra con noi, è una gestione a parte e di ottima qualità”. Giuseppe e Lina sono stanziali e vivono in azienda. “E’ il lavoro della vita. Una passione che costa fatica, sacrificio di giorni e orari”. E che farete per i prossimi trent’anni? “A volte ci pensiamo guardando alle persone che si sono allontanate dalla ristorazione. Però non riusciremo a non fare questo. Accade di essere stanchi, stressati e il rapporto con i collaboratori a volte è complesso per cui capita di chiedersi se sia il caso di continuare o meno. Ma la realtà è che è quello che vogliamo fare e su questo siamo concordi. È un tutt’uno con la nostra quotidianità alla quale, al momento, non vogliamo rinunciare. Stando arrivando riscontri positivi e gratificanti e per questo devo ringraziare tutti i collaboratori e la proprietà che ci ha messo a disposizione tutto quanto serve per lavorare bene e con cura del dettaglio. Il presidente Massimo Giannolli è un entusiasta, insegna molto e ci ha dato carta libera”.
La Collina dei Ciliegi and Cà del Moro Wine Retreat
In the small ancient world of Gianolli, a splendid hill in Grezzane (Vr), between 450 and 700 meters above sea level, we find fifty-five hectares, thirty-three of vineyard areas, vegetable gardens, livestock farms and above all the "Cà del Moro" Resort & Restaurant for hospitality and catering. A mix of rurality and modernity from which eleven wine labels are born divided into three selections and a fine dining menu where the reinterpretations of traditional Lessino dishes stand out, expertly revisited with Mediterranean influences by chefs Giuseppe Lamanna and Lina Maffia.
The Cherry Hill – The Origins. It was 1925, when Armando Gianolli, Massimo's father, was born in Verona. Over the years his Milanese mother entrusted him to a wet nurse in the Camponi area, adjacent to Erbin, Municipality of Grazzane (Vr) where the company is now based. And here Armando spent his early childhood until, in 1932, he returned to Milan. Neither his studies nor his career in the insurance world weakened his bond with this land, to the point that in the 60s and 70s, in the midst of the depopulation of this hilly area with a strong agricultural vocation, Armando began to acquire land in Erbin, the village that he had seen him grow and return at every opportunity. And here the first farm of the Gianolli family was born, later transformed by Massimo into a winemaking (2010) and hospitality-hotel business (2018). Fifty-eight hectares of which thirty-three are vineyards in organic conversion, 11 labels divided into three collections (Terrena, Radicata, Supervalpantena). In September 2022, Meregalli Giuseppe Spa - holding company of the Meregalli Group, leader in the distribution of high-end wines and spirits with a catalog made up of more than 200 producers and 2,000 exclusive specialties - entered the capital of Advini Italia Spa, the joint venture established in July 2020 by La Collina dei Ciliegi and the French group Advini SA. Thus was born AMC Vini Spa (Advini – Meregalli – Collina) which sees the participation of the three partners with equal shares. Cà del Moro Wine Retreat. Nestled among the vineyards of the property in Valpantena in the Verona area between 450 and 700 meters above sea level, we find the Resort & Restaurant "Ca' del Moro Wine Retreat", hospitality of La Collina dei Ciliegi. Inaugurated in 2018, after a work of recovery of ancient stables in the Cimbrian village of Erbin, Cà del Moro combines rurality and modernity thanks to a renovation work carried out according to the ancient methods of the Lessinia mountain huts with recovery techniques that involve the mixing of stones, live lime and natural fibres. An attention to detail that we find in the fine dining proposal with a menu proposal that recounts the close link with Lessinia and its most ancient traditions. Seventy seats divided into three internal rooms, panoramic terrace and stalls. Menus designed by chefs Giuseppe Lamanna and Lina Maffia who enhance the best local and national products with reinterpretations of traditional dishes expertly revisited with Mediterranean influences and the Calabrian and Apulian origins of the chefs. Among the various activities offered by the structure we find excursions and horseback riding, guided e-bike tours through the vineyards, ending with tasting tours in the cellar or in the Resort's wine shop. And then the rooms: Amarone, Valpolicella, Recioto, Ripasso, Garganega and Corvina are not just the 4 great Veronese reds and vines from the hill terroir surrounding Verona. They are also the names of the 6 rooms of Ca' del Moro Wine Retreat.
Giuseppe and Lina's proposal. Arriving from Courmayeur after the pandemic, chefs Giuseppe Lamanna and Lina Maffia, companions for twelve years in life, have immersed themselves in a very young reality, a family as they like to underline, not a company in the strict sense. “We started with Lina and me – underlines Giuseppe – and now we have a staff of six people in the kitchen alone. We provide service for the six rooms, for the wine bar with tasting and above all for the restaurant with thirty-five seats. The service is all-round, from breakfast to lunch to dinner. Everything prepared by us starting from the pastry shop." Giuseppe and Lina inherited a very local and traditional cuisine. As soon as they entered the business they immediately started looking for products and producers in the area compatible with their principles: no to meat coming from intensive farming, attention to animal welfare, preferably organic. For the beef they use Damini & Affini from whom they purchase sorane and the eggs are purchased from Contrada Cà Vittoria. “They are all companies that we regularly go to visit – they point out – and with which we compare ourselves to always have the confirmations we are looking for”. Vegetables and fruit? On a total of fifty-eight hectares of company surface, of which thirty-three are under vineyards, they have two vegetable gardens as well as a riding school with fifteen horses and a brogna sheep farm. “Coming from the south, the Mediterranean note stands out in our dishes, even using local raw materials if not coming directly from our garden. We offer an à la carte proposal with 5 starters, 5 first courses, 5 second courses and 3 desserts and then a five or nine course tasting menu. For a while we have been working on a third menu that is more focused on our Calabrian and Apulian origins. We like to do research and have and show care in the dish with refined combinations but without ever daring too much". Two dishes that give you particular satisfaction? “The spaghettone alla nduja – says Giuseppe – which is a dish of mine that I didn't want to include but it was particularly requested and is having great success. And then the amarone risotto which we interpret with cocoa beans, cherry pulp and bergamot. Another particular dish looking at the second courses is charcoal beef. The grid has nothing to do with us, it is a separate management of excellent quality." Giuseppe and Lina are permanent and live on the farm. “It's my life's work. A passion that requires effort, sacrifice of days and hours." And what will you do for the next thirty years? “Sometimes we think about it when we look at the people who have moved away from the restaurant business. But we won't be able not to do this. It happens that you are tired, stressed and the relationship with your collaborators is sometimes complex so you sometimes wonder whether it is worth continuing or not. But the reality is that this is what we want to do and we agree on this. It is one with our daily life which, at the moment, we do not want to give up. Positive and gratifying feedback is arriving and for this I must thank all the collaborators and the owners who have made available to us everything we need to work well and with attention to detail. President Massimo Giannolli is an enthusiast, teaches a lot and has given us free rein."
